SOUP SUPPER RECIPES!!

The Fourth of July Committee would like to thank everyone for the support of our Soup Supper Fundraiser! We would also like to thank Save-A-Lot of New Lexington for donating groceries to our cause. We were able to raise $210 for fourth of July! Due to popular demand, we have decided to share the recipes for the most popular soups at the fundraiser! Bon appetit!

CHICKEN TORTILLA SOUP:

1/4 cup butter or margarine
1/4 cup flour
3 cups chicken broth
1 cup milk
8 ounces process cheese food (like Velveeta) cubed
1 (10 ounce) can diced tomatoes with green chilies
2 cups cooked, shredded chicken
1 teaspoon cumin
1 teaspoon chili powder
salt and pepper to taste
corn tortillas
shredded Mexican blend cheese

Melt butter in a pot over medium heat. Stir in flour and cook for 2-3 minutes, stirring often. Add chicken broth, a little at a time, whisking to blend until smooth. Whisk in milk. Turn heat to low and stir in cheese cubes. Continue, stirring constantly, until cheese cubes are completely dissolved. Add canned tomatoes, chicken, cumin, chili powder, salt and pepper. Bring to a boil to thicken. Reduce heat to low to keep warm. Meanwhile, cut tortillas into strip and deep fry at 350 degrees until golden brown; drain. To serve, place soup in a bowl, sprinkle with shredded Mexican cheese and top with tortilla strips. Enjoy!

TUSCAN VEGETABLE SOUP:

1 Tablespoon canola or vegetable oil
1/2 large onion
2 carrots, sliced
2 stalks celery, diced
1 clove garlic, minced
1 teaspoon thyme
1/2 teaspoon sage
1/4 teaspoon pepper
4 cups chicken broth
1 (14.5 ounce) can diced tomatoes
1 1/2 cups lentils, rinsed, sorted and drained
2 cups chopped baby spinch leaves

Heat oil in a large pot over medium high heat. Add onion, carrots, celery, garlic, thyme, sage and pepper. Cook, stirring often, until vegetables are tender. Add chicken broth, tomatoes and lentils and bring to a rolling boil. Reduce heat, cover and simmer for about 45 minutes or until lentils are tender. Add spinach and cook another 10-15 minutes until wilted. Enjoy!

SWEDISH MEATBALL SOUP:

1 pound meatballs (store bought or made from scratch)
3 Tablespoons butter
3 Tablespoons flour
3/4 teaspoon beef broth base granules
1/2 teaspoon pepper
1/4 teaspoon garlic salt
2 1/2 cups water
1/2 cup heavy cream or half and half

1 pound potatoes, cubed and cooked until fork tender
1 (10 ounce) package frozen sweet corn

Melt butter in a large pot over medium heat. Whisk in flour, beef broth base granules, pepper and garlic salt. Cook for 2-3 minutes, stirring often. Slowly whisk in water, a little at a time until all water is added. Whisk until smooth. Add heavy cream (or half and half), potatoes, meatballs and corn. Reduce heat to medium low and cook, stirring occasionally, until everything is heated through. Enjoy!
